Transform Your Breakfast with PB Oat Bars

IMG_0110I used to be addicted to alcohol, but now I’m addicted to peanut butter oat bars.

This is proof that life is good and I don’t live in a malevolent universe.

Anyway, I’ve been obsessed lately with figuring out how to make easy breakfasts that I don’t have to make every morning. Cereal is a mess of sugary carbs and omelets take too much time unless it’s a weekend.

This is very simple: 1/2 cup of honey, 1 cup of peanut butter, and 3 cups of oats. Melt the peanut butter and honey in the microwave, mix them with the oats in a bowl, and place them in a baking pan and refrigerate until they’re hard enough to cut into pieces.

I recommend putting 2 tablespoons of coconut oil into the mixture, which boosts the flavor and the health value. This whole process takes 10 minutes.

When cut into 2.5 inch squares, each bar contains about 100 calories and a blend of healthy fats, complex carbs and protein.

I’ll make this each week, once per week, and boil a bunch of eggs for the week ahead. Try hardboiled eggs cut up on top of cottage cheese, with salt and pepper and cheddar cheese.

Now just taste one of those PB bars. Complete breakfast and zero time wasted!!
